Another DIY today! On Friday, I went round my friend Sophie's house and we made cupcakes - mini cupcakes!
We took some photos to share with you so that you can make them yourself, but I apologise that they are not extremely good quality...they were taken on my iPhone.
So without further a do....
I n g r e d i e n t s
110g / 4oz Margarine or Butter
110g / 4oz Caster Sugar
2 Free Range Eggs
110g / 4oz Self Raising Flour
1 - 2 tbsp. milk
1 tsp Vanilla Extract
F o r t h e b u t t e r c r e a m
140g / 5oz Butter
280 / 10g Icing Sugar
1- 2 tbsp Milk
First of all we used this Mini Cupcake Maker from Lakeland to bake the cupcakes - it is ideal, making the cupcakes all the same size and cooked perfectly!
However if you haven't got this cupcake maker you need to preheat the oven to 180C/350F/Gas 4 and line a 12-hole muffin tin with paper
cases.
1. Cream the butter and sugar together in a bowl until pale. Beat in the eggs a little at a time and stir in the vanilla extract.
5. If you them have a piping bag, spoon the mixture in and pipe it onto the delicious cupcakes and decorate if necessary!
I really hope you enjoy this. It is such a simple recipe yet so delicious! Be sure to let me know if you try this out!
