DIY Cupcakes'








 
 
Another DIY today! On Friday, I went round my friend Sophie's house and we made cupcakes - mini cupcakes!
We took some photos to share with you so that you can make them yourself, but I apologise that they are not extremely good quality...they were taken on my iPhone.

So without further a do....

I n g r e d i e n t s
 110g / 4oz Margarine or Butter
 110g / 4oz Caster Sugar
 2 Free Range Eggs
 110g / 4oz Self Raising Flour
 1 - 2 tbsp. milk
 1 tsp Vanilla Extract

F o r  t h e  b u t t e r c r e a m

 140g / 5oz Butter
 280 / 10g Icing Sugar
 1- 2 tbsp Milk
First of all we used this Mini Cupcake Maker from Lakeland to bake the cupcakes - it is ideal, making the cupcakes all the same size and cooked perfectly!
 
 However if you haven't got this cupcake maker you need to preheat the oven to 180C/350F/Gas 4 and line a 12-hole muffin tin with paper cases.

1. Cream the butter and sugar together in a bowl until pale. Beat in the eggs a little at a time and stir in the vanilla extract.

 

 
2. Fold in the flour adding a little drop of milk until the mixture is of a dropping consistency and spoon the mixture into the cases.

 
3. Bake in the oven for 10 - 15 minutes or until golden brown and then set them aside for 10 minutes to cool down.

 
4. For the Butter Icing, beat the butter and add half of the icing sugar until smooth. Then add the rest of the icing sugar with one teaspoon of milk, adding more milk of necessary until the mixture is smooth and creamy.

5. If you them have a piping bag, spoon the mixture in and pipe it onto the delicious cupcakes and decorate if necessary!
