Hey everyone!
This weeks DIY will be how to make a 'Malteaser Cake'. I made mine for my Nanny's 70th birthday, the reason why it is a giant cupcake and has iced writing around the plate hehe!
This is such an easy recipe!
Note: Due to the fact I made a Giant Cupcake shaped cake, I made 2 batches of the mixture, in order for them to fit in the moulds.
So lets get started...
Ingredients
For the Cake
-150g Soft Light Brown Sugar
-100g Caster Sugar
-3 Eggs
-175ml Milk
-15g Butter
-2 Tablespoons Horlicks
-175g Plain Flour
-25g Cocoa {sieved}
-1 Teaspoon Baking Powder
-1/2 Teaspoon Bicarbonate of Soda
For the Icing
-250g Icing Sugar
-1 Teaspoon Cocoa
-45g Horlicks
-125g Soft Unsalted Butter
-2 Tablespoons of Boiling Water
-2x37g packets Malteasers
Step 1
Take whatever you need out of the fridge so that all the ingredients to room temperature (though its not crucial here because you are heating the milk, butter whisking the eggs.) Preheat the oven to gas mark 3/170 degrees and butter line 2 20cm loose bottomed sandwich cake tins with baking parchment.
Step 2
Whisk together the sugars and eggs while you weigh out the other ingredients; heat the butter, milk and Horlicks powder in a saucepan until the butter melts and it is hot but not boiling. When the sugars and eggs are lightly frothy, beat in the Horlicks mixture and then fold in the flour, cocoa, baking powder and bicarbonate of soda.
Step 3
After you have mixed that together, divide your cake batter evenly between 2 tins and bake in the oven for 25 minutes, by which time the cakes should have risen and will spring back when pressed gently. Let them cool on a rack about 5-10 minutes and turn out of their tins. Once the cakes are cold you can get on with the icing!
Step 4
You don't need to sieve the icing sugar, so put the icing sugar cocoa and Horlicks in the bowl (or processor if you have one) and blitz to remove all lumps. Add the butter and blitz it again. Then pour in the boiling water until you have smooth buttercream.
Step 5
Sandwich the sponges with half of the buttercream and use the rest to ice the top and add some malteasers as a finishing touch.
